The key lime (Citrus aurantifolia Swingle) is in a class all of its own. Much smaller than regular "Persian" limes, the key lime ranges in size from a ping-pong ball to a golf ball (about 10cm to16cm in circumference).The peel is thin, smooth and greenish-yellow when ripe. The flesh is also greenish-yellow and full of highly poly embryonic seeds (two or more plants from one seed). The interior is divided by 10 to 12 segments, quite juicy and has a higher acidity than regular Persian limes. Key limes have a very distinctive aroma, which makes them valuable for culinary use

Authentic key Lime Pie
The original key lime pie at its best. This my favorite. It’s tart sweet and refreshing on a nice spring or summer day. This recipe call for a baking period of 12 minutes, The original was not baked. The key lime acid was strong it firmed the egg yolks with out baking.

Original recipe yield 1 - 9 inch pie

 


 

Servings 8

INGREDIENTS (Nutrition)

4 large or extra large egg yolks
1 14 ounce can sweetened condensed milk
1/2 cup fresh key lime juice 
or 12 large Key Limes sqeezed
2 teaspoons grated lime peel, green portion only
1 graham cracker crust for a 9 inch pie crust


CRUST (Nutrition)

16 graham crackers, crushed 
3 tablespoons sugar 
1 cube (1/4 lb) margerine or butter

DIRECTIONS

  1. Beat the egg yolks until they are thick and turn to a light yellow, don't over mix.

  2. Add the sweetened condensed milk. Mix in half of the lime juice.

  3. Once the juice is incorporated add the other half of the juice and the zest, continue to mix until blended.

  4. Pour the mixture into the pie shell.

  5. Bake at 350F for 12 minutes to set the yolks and kill any salmonella in the eggs

    CRUST
  6. Mix the ingredients and press them into a 9″ pie plate. Bake in a preheated 350F oven for 10 – 12 minutes until lightly browned. Place on a rack to cool.
