We've traditionally worked on a referral basis because those who have been referred to CPKC understand that we are a small, specialty gourmet bakery.  EVERYTHING IS MADE FRESH TO ORDER with lots of love and generous amounts of creative energy.  That means depending upon the size of the order, one may have to wait up to 7 days or more before receiving their desserts. 
 
Additionally, it seems as if nowadays, there isn't any REAL, PERSONALIZED customer service for consumers anymore.  That's what our goal is.  We want a positive, unique connection with EVERYONE we serve.  If you don't know anyone at our bakery that's okay.  Call us up and make a positive connection with staff or management.  We welcome you!

Blueberry Pie

Blueberry pie can be a wonderful taste sensation anytime of the year! Of course we use fresh blueberries when they're in season but when they're not, I use frozen. If you want your dessert to be one that stands out from the rest. I recommend using only all natural and organic ingredients. We always like to use certified organic ingredients in all of our baked goods. Especially the dairy, eggs and the fruit! Additionally, the type of water you use to clean your fruit and make your dough is so important. I use Kangen water (kangendemo.com). But if you don't have that, use the best filtered water you can find. Now let's bake!

Organic Bluberry Pie

supplies you will need:

  • 2 large ceramic bowls
  • wire whisk
  • medium saucepan
  • medium sized plastic container
  • plastic wrap
  • measuring spoons and cups
  • 9" glass pie pan
  • rolling pin
  • serrated knife
  • parchment paper
  • pastry brush
  • tin foil

INGREDIENTS CRUST:trition)


2 cups of organic unbleached all purpose flour

3/4 cup of organic unsalted butter, chilled (fridge)

5 to 8 tblsp. of ice water

1 tsp. of sea salt

organic cinnamon (to taste)

organic cane sugar (to taste)

extra butter (melted) to brush bottom of pie pan

 

INGREDIENTS FILLING:

12 oz. frozen organic blueberries

1 cup of water

1/2 cup of evaporated cane juice (organic cane sugar)

1/4 tsp. of organic nutmeg

1/4 tsp. of organic cloves

1 tsp. of tahitian vanilla

1 tsp. organic cinnamon

1 1/2 tblsp. of tapioca flour

pinch of sea salt

1/2 mini meyer lemon



DIRECTIONS

  1. Get a medium saucepan and put it on the stove. take a small strainer and place it over the saucepan. Pour the whole bag of blueberries into the strainer. Next take your cup of water and pour it all over the blueberries. Shake off the excess into the saucepan and take your blueberries and put them into a plastic container. Get your lemon and squeeze the juice of the lemon all over the blueberries. Watch out for any seeds! Cover your container of blueberries and place them in the fridge.

  2. Next get a large ceramic bowl and fill it halfway with cool water. Once the filling is cooled place the filling into the container with the blueberries and shake the container up to mix it together. Blueberries will still be frozen so don't worry they won't turn into bits and pieces!

  3. Next, return to your saucepan and add all the rest of the filling ingredients into the saucepan. Get a wire whisk and mix all the ingredients together until the mixture doesn't have any lumps. Next, turn on the heat on medium high. Bring the mixture to a boil, all the while stirring it so it stays lump-free and the sauce has clearly thickened. (This whole process will take approx. five minutes.) Next, take your saucepan and put it in the large ceramic bowl to cool down. While you're letting the filling cool down. Let's start on the dough.

  4. In a large bowl add the flour and sea salt. Cut butter into 12 pieces and rub into dry ingredients until the mixture resembles a coarse meal with some pea-sized pieces. Sprinkle water over mixture, one tablespoon at a time and knead lightly just until a dough forms. Form dough into a ball. Cut in half and press into a disc shape.

  5. Take a piece of parchment paper roll it out over your work surface. Sprinkle a little flour on the paper and your rolling pin. Take your first half of the dough ball and roll it out WIDE enough to fit your pie pan without stretching! Sprinkle some sugar/cinnamon on the dough and rub it in. Brush the entire pie pan with melted butter. Take your crust and place the cinnamon/sugar SIDE DOWN into the pie pan.

  6. Roll out your second crust. Sprinkle cinnamon/sugar on that as well and rub it into the dough. Make sure the crust is rolled out wide enough to fit the entire circumference of the dish. Then take a fork and poke the pie crust at least six different places in the dough. This will let steam escape. You can even make it look decorative. Now it's time to put the pie together. Put your filling with the berries into the bottom crust. Put the top crust on the pie. Now gently fold the two crusts together and work your way around the entire pie. Place in your fridge and let it chill for about 30 minutes.

  7. Preheat your oven to 350 degrees and bake for 50-60 minutes. If you see the crust browning unevenly (which happens in some ovens) simply place tin foil over those areas and let the pie bake. You'll know when the pie is done because the whole house will smell great AND you've used that handy see through glass pie pan! Enjoy!
